2010 Val de Mer Chablis
As you wine clubbers know, we always love Chablis, so we were especially intrigued with this new project from Patrick Piuze that has been receiving a lot of attention. Unlike most of the producers in this region, Piuze does not own his own vines, nor is he a native Frenchman. This French Canadian’s winemaking path began at a young age when he met Marc Chaputier, a highly regarded vigneron from the northern Rhone valley who inspired Puize to delve into the wine world. Shortly after, Piuze returned to his home in Montreal and opened a wine bar, but was set on making wine, so he packed his bags and moved to Burgundy. Several stints at very prestigious estates in Burgundy grew his reputation as a true winemaker and eventually landed him the job as the cellar master at Domaine Jean-Marc Brocard in Chablis.
In 2008, He launched his own label, Val de Mer or “Valley of the Sea” (a nod to the unique soils of this region composed of fossilized sea matter) with the intent of creating wines focused on the different terroirs of the Chablis region. Because he purchases his fruit, he has the opportunity to select grapes from very specific areas allowing him to produce wines that truly speak of the region in all its different forms. The wines are beautiful—concentrated and rich, incredibly elegant with a clear focus on the classic style of the region.
Oysters are a no-brainer with this wine, but its lovely balance of richness and mouthwatering acidity will complement a richer dish nicely. A lemon-scented cream sauce over fish or chicken would be divine.

2010 Laporte Cabernet Franc
This month’s red wine hails from the Loire Valley, France. Domaine Laporte, originally founded in the 1850s, has grown to be a prominent Loire Valley producer with property both in Sancerre and Pouilly-Fume. Although most of their production consists of a number of different white wines from Sauvignon Blanc (which, like the wines from Piuze, are focused on the different soil types found in this region), they do make small amounts of red and rose wines as well. The “Le Boquet” Cabernet Franc comes from vineyards near Chinon, a small town which lends its name to the surrounding appellation known for its classic red wines made from Cabernet Franc. Wines from this area are generally red-fruit driven—think raspberry, cranberry and red currant, with a touch of green savory character, sometimes reminiscent of tobacco leaf or in its most extreme forms, green pepper. This particular wine is meant to be an easier, more fruit-driven expression. An all stainless fermentation and ageing brings out bright red fruit and a hint of spice. Medium bodied, silky, juicy and red…it’s the perfect wine for a summer evening.
Although this is great on its own, this would pair nicely with some charcuterie or a light poultry or fish dish.
