Pair With: Route 1 Farms Roasted Fennel w/ Herb Vinaigrette
Recipe:
4 Route 1 Farms fennel bulbs, stalks trimmed and each bulb cut vertically into 8 wedges with core attached to each wedge
1/2 cup extra-virgin olive oil
1 tablespoon each chopped fresh thyme, rosemary and oregano
1/8 teaspoon dried crushed red pepper
2 Route 1 Farms Meyer lemons, zested and juiced
1. Preheat oven to 425°F. line a large rimmed baking sheet with parchment paper.
2. Toss fennel with 2 tbsp oil and spread out on baking sheet; sprinkle with coarse kosher salt and pepper. Roast fennel, turning often, until tender and golden at edges (about 30 min.)
3. For the vinaigrette, combine the lemon juice, zest, fresh herbs, chili flakes and oil. Whisk to combine and season with salt and pepper to finish.
4. To finish, toss the fennel with the herb vinaigrette and enjoy with a glass of the 2011 Colle Stefano Verdicchio di Matelica - Marche, Italy $20. Today only enjoy 10% off a bottle!
